Gräupchen–Pearl Barley & Ham Soup

The broth

1 ham (I like using cured ham)

Cover with water

2 bay leaves

5 juniper berries

1 Tablespoon rainbow peppercorns

5 pimento

1 generous piece of celeriac

2 medium carrots

1 medium onion

1 small leek

Simmer all for about 2 hours

The Barley

Depending on size of barley corns (how they are milled) boil for 30 min to 1 hour in water with salt

Wash in sieve with cold water until the water runs clear


Cut in small pieces and boil

Making the Soup

Take the soup veg out of broth press through sieve into the broth

Cut 1 large carrot and small leek into small pieces

Cut meat in pieces put into broth

Put barley and potatoes into broth

Boil all until carrots are to your liking

Serve sprinkled with fresh parsley
