Thick Tomato Soup

This time tomato soup with a bit more oomph for cold days. Just in case you are wondering, yesterday (3rd of May!) we had to scratch ice from the car window in the morning. So not funny! Hence the hot soup.


Ingredients Thick Tomato Soup

2 medium potatoes

1 pint (liter) tomato puree

2 shallots

1 fresh pepper

some crushes chillies, oregano, salt and freshly cracked rainbow peppers

aceto balsamico (1/2 teaspoon)

How to make the soup

  1. Olive oil, chopped shallots and diced pepper into a frying pan
  2. Fry until onions and peppers slightly browned
  3. Add finely diced potatoes and 2 cups of water
  4. Simmer for about 5 minutes until potatoes soft
  5. Throw all into foot processor or use your handblender to mix it until thick mass
  6. Add the tomato puree and herbs and spices
  7. Stir well and let it simmer for a couple of minutes


Tip: When serving add half a teaspoon (or 1 teaspoon depending on how strong you want it) of balsamic vinegar
