Quiche–Leek & Cheddar


Leek & Cheddar Quiche

I am not a big fan of quiche. I would occasionally try some but tend to get really underwhelmed by the experience. Part of it is that I am aware of the cholesterol blasting recipes traditional quiches have. So I decided to experiment a little.

The Quiche Base

1 teaspoon yeast

3 cups of flour

1-2 cups of warm water

Prepare yeast dough as usual
While the dough rises prepare the filling.

Leek & Cheddar Filling

Step 1:

cut 2 leeks into slices

put in pot and poor boiling water of them

let this soak while you prepare the rest of the filling

Step 2:

3 eggs

1,5 packs of extra light Philadelphia cream cheese

1 cup of milk

2 teaspoon caraway seeds

3 pinch mixed herbs

3 pinch salt

2 Tablespoons grated vintage cheddar
Beat eggs until foamy

Add milk & cheese

Add all the spices

Step 3:

Mix the leek and the cheese filling together


Creating the Quiche

After thoroughly kneading the dough roll it out and put it into the quiche form

Take a fork and put holes into the dough so it raises regularly

Put dough into preheated oven (200°C) bake for 5 minutes (or until almost done)

Take the form out and put the quiche filling in

Bake for about 30 minutes
