So I was lazy and bought the cannelloni in the supermarket. But still made a fresh filling.

in the middle of the pile—sauce—pile process

This is a quick and easy recipe:

I used about 14 Cannelloni (this ensured 2 additional lunches for hubby)

1 can of chopped tomatoes (organic)

1 bag of baby spinach (organic)

1 bag of mixed spinach & rocket

1 tub of ricotta (ca 250 gr)

salt, pepper, fresh herbs

1 ball of mozzarella

2 slices Gouda

  1. put the spinach & rocket into a colander
    and pour boiling water over it this prevents the dish from becoming too watery
  2. mix tomato, spices, ricotta & herbs into a thick sauce
  3. take the cooled down vegetable and stuff it into the cannelloni
  4. pile cannelloni in baking form pour 1/2 of the sauce over it
  5. lay the mozzarella on top of this layer
  6. add another layer of filled cannelloni
  7. pour the rest of sauce over it
  8. lay 2 slices of Gouda on top of dish (I love Gouda for baking it creates a nice crunchy cheesy gooey layer)
  9. put lid on dish
  10. now put it in preheated oven (220 C)
  11. for about 40 minutes (depends a bit on the form I usually keep and eye on it and once the sauce starts boiling—you will see it bubbling—I give it 20-25 minutes)
