Summer Pasta Sauce

I recently rediscovered Haloumi, if you do not yet know the salty cheese: you can use it fresh, fried, or cooked in pretty much any way you can think of. The cheese does not melt when you heat it which makes it a good substitute for meat—for the vegetarian in you.

Pasta: make what ever pasta you like recipe is for 2 persons


  • 1/2 onion or one small onion
  • 1/2 red chili (or 1/4 green & 1/4 red chili)
  • 100 gr Haloumi
  • 1 teaspoon olive oil
  • 1 tin chopped tomatoes (by any means if you have fresh tomatoes use about 6-8 medium sized)
  • Fresh basil & Oregano
  • Black pepper
  • 5-7 aglio alla Siciliana  (or 1 glove of fresh garlic)

Tip: My frying pan has a glass coating so I only need a teaspoon of oil. Depending on your pan you may need a little more.

Tip: Aglio alla Siciliana is garlic pickled in oil with crushed chilies. My dad just had send me a couple of glasses and I discovered it works wonderfully in sauces.

Fry the onion & Haloumi until both are slightly browned

Add the chilies and fry for another minute or two

Add garlic, tomatoes and spices

Let simmer for about 5 minutes until the sauce if thoroughly heated

Crash some black pepper on top
