Winter Lore 16 – Pfefferkuchen aka Gingerbread

Today you are in for a special treat – granny’s gingerbread recipe! Pfefferkuchen means literally pepper cakes, in the olden times Pfeffer was used to describe all spices. So it means spicy cake.

I did not have a picture of Pfefferkuchen so I copied the best ever Pfefferkuchen company, of course traditionally Saxon into the post- Pulsnitzer Pfefferkuchen

Now without further ado the ingredients:

200 gram honey (or sirup)

200 gram sugar

500 gram flour

1 Tablespoon Baking Powder

and granny says she always adds a Tablespoon of butter into the dough

As for the spices – I would say try out how strong you like them and what you like:

1 teaspoon cinnamon

1/2 teaspoon powdered cloves

1/2 teaspoon pimento

1/2 teaspoon cardamon

If you like add the zest of 1 orange and 2 lemons (organic)

and then go crazy with chopped almonds, raisins, nuts or leave these out and keep the Pfefferkuchen plain and simple

  • mix all ingredients
  • knead thoroughly
  • roll the dough 1/4 inch thick
  • now cut or cookie cut shapes out of the dough

bake for 5-10 min on gas 8 (again experiment a bit if you have air circulation oven this might go much quicker)

Once the Pfefferkuchen cooled down a little

you can cover them with dark chocolate, standard icing, or mix icing sugar with red currant jelly

granny love to make lemon icing: use icing sugar 100 gr and slowly add lemon juice until the sugar and juice make a thick mass you can spread onto the Pfefferkuchen
