Pickles 01 – Celeriac


My Family loves its pickles. Granny pretty much makes conserves out of anything, my favourite is pickled celeriac.

For a family sized portion:

1/2 celeriac

2 carrots

1 handful of mangetout

1/2 liter water

1 teaspoon salt

1 bay leave

10 peppercorns

5 juniper berries

5 Tablespoons pickling vinegar

2-3 Tablespoons sugar

  • Boil the vegetable in the saltwater for about 4 minutes
  • Add the other ingredients and boil for another minute
  • Fill into a glass or container
  • Let cool down and store in the fridge – or can it
